I just bought a boat with a LS3 and it has a sticker that says premium fuel only. I have not run this boat yet so the sticker is my only reference, I have a truck that requires only premium and it runs like crap with regular.

I had looked into this for my CX project.
GM says premium is recommended for best performance, but not required. I think what that means is, try to always run premium unless you run into a situation where all you can get is regular. Use the regular to get you home then filler back up with premium.
The ECM /knock sensors should pull advance out to compensate for the lower octane. AKA “runs like crap”
This said, it also depends on how the marine builder has the computer flashed, how the engine is being loaded, and the operating environment.
Always best to confirm with engine supplier for warranty.

I just took my new 19' Lynx out last night. It has Full teflon, 8 degree hull, the Kodiak 410hp LS3 motor and a Hammy 212 with a 3.4 kw impeller.
It ran 4300 rpm and 48mph downstream and 44 mph upstream. The boat will stay on plain at 2800 rpm with the tabs down a 1/4".
Very Happy so far.

The fuel injected ls3's will run on regular but the carbed ones won't. But then again the carbe ls3's make over 100 hp more than the kodiak ls3.
